Bratwurst is a German sausage that is very popular in the Midwest of the United States. The sausage has a lot of flavor, but it isn't hot at all. You can either link it or make patties. Brat patties are really great in the summer! It is great on the grill or steamed with onions. Sometimes we use beer instead of water to steam it. Each mix will season either 10, 25, or 50 pounds of meat into bratwurst sausage. If you need a quantity or size not listed, please contact me for a quote.

Ideas to use making Bratwurst

  1. Use 1 cup of milk or beer in place of the water to mix the sausage
  2. Chop up 1/2 cup of dried fruit fine (cranberries, cherries, apples, etc.) and add to meat
  3. Chop up 1/2 cup of onion fine and add to meat
  4. Add 1 beaten egg along with the liquid to mix the sausage
  5. Add 1/2 cup of sauerkraut to meat
  6. Chop 1 cup of baked potato and add to meat
  7. Use 7 pounds pork and 3 pounds turkey breast or veal instead of all pork
  8. Chop up 1/2 cup of green pepper fine and add to meat

If you grind your own meat, you can just grind the additional items with the meat rather than chop them fine. They will mix with the meat better that way.

You can also use combinations of the above ideas together such as using 1 cup of milk instead of the water, add 1/2 cup dried fruit, and 1 beaten egg.

Sweet and Sour Red Cabbage

Bratwurst Meatloaf

Sauerkraut

bullet1 lb. sauerkraut, drained but not rinsed (bag or jar, not canned)
bullet1 teaspoon brown sugar
bullet1 red apple cored and sliced thin (skin left on)
bullet1 small onion sliced thin
bullet1 teaspoons caraway seeds
bullet1 potato, peeled and grated
bullet1 cup water or dry white wine
  1. Mix all ingredients in a large fry pan and cook covered over medium low heat until hot and onion and apple are tender

You can put bratwurst links on top of the sauerkraut as it is cooking. This will steam the brats and the drippings will give the sauerkraut a great flavor.

Sweet and Sour Red Cabbage

bullet1 head red cabbage sliced about 1/4" thick (1-2 lbs.)
bullet1 onion sliced
bullet2 red apples cored and sliced
bullet1/2 cup dry red wine
bullet1/4 cup vinegar
bullet1/4 cup brown sugar
bullet1/4 teaspoon ground black pepper
  1. Mix all ingredients in a large sauce pan and cook covered over medium heat until cabbage is wilted and tender, about 45 minutes to an hour

This is a great side dish anytime. As an option, you can fry 3-4 slices of diced thick style bacon and add to the cabbage.

Bratwurst Sandwich

bullet1 lb. bulk bratwurst (of course, home made using Papa Greco's bratwurst spice mix!)
bullet2 cups sauerkraut
bullet8 slices pumpernickel or caraway rye bread
bullet4 slices Swiss cheese
  1. Make 4 1/4 pound patties out of the bratwurst
  2. Cook them by either pan frying, grilling, or Bar-BQing
  3. When the patties are done, put a slice of Swiss cheese on each  patty and continue cooking until starting to melt
  4. Put a patty on slice of bread and cover with 1/2 cup of sauerkraut, cover with a slice of bread

Great with a cold mug of beer and sweet and sour red cabbage as a side dish..

Bratwurst Meatloaf

bullet1 lb. bulk bratwurst (of course, home made using Papa Greco's bratwurst spice mix!)
bullet1 onion chopped coarse
bullet1 egg scrambled
bullet1/4 cup ketchup
bullet1/2 cup plain bread crumbs
  1. Mix all ingredients
  2. Put into a bread loaf pan, smoothing out the shape
  3. Bake at 350 degrees for 1 hour
  4. Let cool 10 minutes before slicing

Also makes great sandwiches
